Quick Colorful Chopped Salad

This salad is a longtime favorite of mine. Quick and easy go-to ingredients that pair well with many light creamy dressings. Full of color, full of flavor, full of nutrients. Don't worry you'll be able to make it as pretty as the picture too!


A rainbow a day keeps the Dr. away

Ingredients

  • 1 Vine Ripe Tomato

  • 1/2 Small Orange Bell Pepper

  • 1/2 Small Yellow Bell Pepper

  • 1 Small Avocado

  • 1 Persian Cucumber

  • 1/4c Quinoa *Sprouted or Cooked

  • 3tbsp Pepitas

  • 2 cups fine chopped kale


Directions

  1. Wash and dry all veggies

  2. Fine chop the kale and transfer to bowl

  3. Dice tomatoes and peppers into small cubes.

  4. Slice the cucumber into 1/2 moon shapes.

  5. Cut avocado into small pieces



Optional

  1. Precook or sprout quinoa

  2. Pre-soak raw pepitas or use roasted


Plate it

  • Add kale and quinoa to your bowl and toss well.

  • Align the edge of the bowl with cucumber pieces.

  • Circle tomatoes and peppers in the center by color.

  • Place avocado on the outside of the circle.

  • Sprinkle pepitas behind avocado.

  • Top with your favorite dressing.

  • Garnish with herbs.
