Don't Eat Less, Eat Right!!!

So what I'm not the creator of the original cucumber boat, but maybe I can pat myself on the back for this mixture combo. I definitely stumbled upon it while finding my balance on my never-ending wellness journey. Let's begin by saying that this mixture can also be enjoyed many other ways. The cucumber boat is just our "healthy shell." If you're at the start of your transition pair this mixture with crunchy tortilla chips or burrito wrap! *The Siete brand is my go-to for wraps and chips. BABY STEPS is where it's at! Enjoy your journey one bite at a time.


Eating the rainbow every day can improve your vision, decrease inflammation, reduce your risk of heart disease, diabetes and strengthen the immune system. To get started, try to include as many plant-based colors in your meals and snacks as possible. Each color provides various health benefits and no one color is superior to another, which is why a balance of all colors is most important. Getting the most phytonutrients also means eating the colorful skins.

Cucumber Boats

Servings: 6


Ingredients


Mixture

  • 1 cup cooked black beans

  • 1 large red tomato

  • 1 medium orange bell pepper

  • 1 ear corn yellow or bi-color

  • 1 cup fresh cilantro

  • 1 medium avocado

  • 2 key limes juiced

  • 1/4c diced purple onions

  • 1 cucumber *for mixture

  • 4 or more additional cucumbers for boats

Spices

  • 1/2 tsp Chili Powder

  • 1/2 tsp Garlic Powder

  • 1/2 tsp Onion powder

  • 1/4 tsp Mineral Salt

  • 1/4 tsp Fresh Ground Pepper



Directions

  1. Pre-cook your beans

  2. Dice the tomatoes, peppers, 1 cucumber, and onions

  3. Cut corn off of the cob

  4. Fine chop the cilantro

  5. In a bowl mix all ingredients well

  6. Add spices & lime juice. Mix Again

  7. Dice the Avocado & gently stir it in Do this last so the avocado isn't mushy

  8. ALMOST DONE! Prep the cucumbers

  9. Slice additional cucumbers in halves or quarters then scoop of the seeds.

  10. Stuff the cucumbers and ENJOY!
